Our menu is an ever-evolving expression of who we are. Each dish is rooted in bold flavour, guided by curiosity, and shaped by the incredible produce of Australia’s finest growers, fishers, and artisans. With native and wild ingredients, housemade elements, and time-honoured techniques, every plate is designed to be shared, savoured, and remembered.

 

From the open-view kitchen to the warmth of the dining room, Bottarga invites you into the process — the heat, the aroma, the quiet details that make each dish come alive. What reaches the table is only the beginning of the story; the rest unfolds with every bite.

OUR STORY

After four wonderful years at our first home on Martin Street — where we built our vision, learned, grew, and welcomed countless guests — Bottarga is stepping into a new chapter on Bay Street, Brighton.

 

This move is more than a change of address. It’s an evolution. A chance to refine what we love, expand our craft, and create a space that feels familiar yet entirely new.

 

We are deeply grateful to everyone who has supported Bottarga from the beginning. Your trust and encouragement have brought us here, and we’re honoured to share this next stage with you.
